Rustic Furniture. Few Q's about drawknives and wood types.?

Will be working with logs to make a few pieces of rustic furniture and railings. Mostly in the 3 - 8" diameter range.
Looking for advice on length of blade and curved vs straight. I will be trying to leave a few bits of bark on the wood for character.
My wood source will be a 16acre piece of land we purchased. A small area will be cleared out for a tiny cabin. Is this greenwood okay to use? Or will downed branches and trees be better d/t them being drier wood?
Tree types on the land include (to the best of my limited knowledge) sugar maple, striped maple, beech, poplar, white pine, spruce, white birch. - mixed great lakes forest in Ontario. Would you recommend any types of wood over the others?
Any advice would be great.

Greenwood is ok for fencing, but for furniture you want dry wood, or all your work will be wasted as it dries and shrinks. Fit is important with mortise/tenon joints. No specific blade info, cause my info comes from my Dad teaching me about wood years ago, and he liked to keep me away from the sharp stuff. I use a retractable box-cutter from most big stuff, not what you need. You've got nice wood available by the sound of it, but you're going to need a dry place to stack and store it or it will shrink, crack and check when you bring it into the dwelling. (When you stack it, remember to put in occasional pieces crosswise as spacers so that the bottom center pieces dry too. And OFF the ground so it dries and doesn't get too bug infested. There are some good books out there on rustic furniture. Are there woodworkers in your area? They could give you advice on local resources. Or, you are in Ontario? Try Lee Valley Tools, in person or online, they sell books and tools and are very helpful if you have questions.
